We are thrilled to announce that our Chef, Sav Cordaro, has been shortlisted for the prestigious Chef of the Year Award at the Public Sector Catering Awards, 2024!
Our Catering Manager, Jo Davis, says that with over 20 years of experience in catering: “Sav not only exhibits exceptional culinary skills but has also demonstrated exemplary leadership and an unwavering passion for the art of gastronomy.”
Sav has also taken our team of six Chefs out of their comfort zones by exposing them to diverse cuisines – including inviting College parents from Malaysia to share recipes and bringing in a team of Indian Chefs to teach the team about new cooking techniques.
Sav’s commitment to local sourcing and sustainability at Ardingly includes the creation of a herb wall and a flourishing kitchen garden; regular visits to local suppliers (including going out on a boat with a local fish supplier to handpick the freshest catches); prioritising sourcing fresh vegetables and fruit from local farmers; reducing food waste by ensuring the kitchen’s oil is recycled and converted into biofuel; and ensuring surplus food is donated to local food banks and homeless shelters.
